I microwave white fish fine, but I simply boil chicken breast in an inch of water on the stove. If you treat it a bit like pasta - boild then turn down to simmer - it will be fine. I turn it and also cut into the meat to make sure it's cooked. The really hard part is convincing the boys that they really really want to wait for the chicken to cool down before I serve it to them.
Good luck.
PS Here in the UK some white fish is the same price (by weight) that good cat food is and some is even cheaper; so while they will never live on a white fish diet there is always some in the freezer for tummy probs and treats.
