I have never experienced this problem. But if it was one of my cats suddenly starting to do this, I'd first have him/her checked for medical issues. Perhaps some bowel problem prevents him from getting to the tray in time.
Other causes might be: tray too small; wants a different tray for poo; doesn't like the type of litter; is bored and wants a playmate...
But personally, I'd want to rule out a medical problem first.
