My Ginger is doing the same thing, I assumed it had to do with the E collar as she was just spayed recently. Although I have two Beagles that knock their food onto the floor to eat it also. I have switched Ginger from the "minced" to the "chunks and gravy" style food. It seems to be easier for her to eat, with her little baby teeth. When she gets older though I will be switching her to all dry kibble, I don't think she is going to like that too much, cause she loves her canned food! Maybe a mat under her dish would help keep the food off of the floor? Good luck!
